Seafood Chow- - dah!
The dinner table wasn't as
full as I had thought it would
be on Saturday night. I called
my sister for a Seafood Chowder
recipe.Her husband fishes!
Shrimp was on sale and that
is my husband's favorite. We
also had flounder in the freezer
from the beach, fresh at the dock!
It was delicious! Thanks for your
suggestions. I'm sure your table
was as tasty this past weekend.
Now it looks like snow!
Seafood Chowder
( From Cooking Light)
8-12 slices of cooked bacon, crumbled
1 large onion, chopped
2 celery , chopped
1 1/2 lbs. potatoes, cubed
3 8 oz. clam juice ( I used 2 with chicken broth for remainder)
1 c. heavy cream ( can use half cream , half milk, or all milk)
2 cups of milk
1 lb. shrimp ( I also put in bits of flounder, use any seafood)
3 tbsp. parsley
salt and pepper to taste.
Cook onions and celery in bacon drippings after cooking bacon.
Potatoes, onions, celery in liquid, except the milk or cream.
Cook for 15 mins. until potatoes are done. Add bacon and
seafood. When all is cooked , add milk and cream. Parsley on
top before serving. Taste for salt and pepper.

Sounds great! Funny....I've been cleaning out my Christmas cards from the past MANY years, and came across a recipe you sent me called CHRISTMAS EVE CHOWDER! Wonder if you still have it, or should I put it in your Christmas card next year?! Also a recipe for BIG APPLE PANCAKE ----remember that one???
